Who doesn’t love waking up to pancakes in the morning? Even if they’re made out of potatoes with a side of applesauce!
Ingredients: (Yields 2 pancakes)
- 1 large russet potato
- 1 egg
- canola oil
- sea salt
- Peel and grate the potato, being careful of your fingers!
- In a bowl, beat an egg and add in the grated potatoes. Toss in a big pinch of salt and a smaller pinch of pepper. Mix well to combine everything in the bowl.
- Heat the canola oil, about 1/2 tablespoon, in a nonstick skillet over medium-high heat and when the skillet is hot, gently spoon in half of the potato mixture. Shape the mixture into a circle and fry for about 3 minutes on each side or until desired crispiness.
- Serve on a plate with some applesauce!
